We buy our goslings as day olds from Newland Farm Geese, Tiverton, in April, with the day old Turkeys from Kelly Bronze Turkeys, Essex, being bought in June. The ducks and chicken are also reared on the farm from day old from September. We rear them to full maturity, giving us full control on the end flavour of the birds.
We buy mainly small strain hen birds, so produce a small size turkey, but with more breast meat than a large strain bird would give. The birds are fed on natural diets of cereals and clover rich pastures. Paul is a fully licensed slaughter-man. All birds are processed on the farm, where they are then hung for 14 days for full flavour, then prepared oven ready.
